Publisher’s note: A pie recipe as the top post? Why not on this holiday weekend? What could be better news than a blue ribbon pie that doesn’t require pastry perfection?
Marianne Carlson, Jefferson’s gracious and most successful competitor in Iowa State Fair food contest, won four ribbons in the Machine Shed’s pie contest this year. “Swell, good for her,” say those who are afflicted with crustophobia, the rather common malady shared by many who run for cover when folks start recruiting people to make homemade pies.
Not to worry! Our Super Baker also won a blue ribbon in the Keebler pie contest, the contest that starts with a ready made crust, a “cheater” crust.
Marianne shares with GreeneCountyNewsOnline readers her recipe for Red, White and Blue Pie. The addition of lemon Greek-style yogurt to the bottom layer, along with a hint of lemon in the whipped topping, makes it a wonderfully refreshing dessert. Marianne knows how to compete – she piped on the topping rather than spreading it over. No matter how the topping is used, the pie is absolutely scrumptious…. and it doesn’t require a rolling pin.
